Chai-Spiced Carrot Cake Bites

Carrot cake is THE spring cake. And let's be real, I want it all the time.

Also I got GOALS, momma.

And I don't want to turn on the oven when it's 90 before the first official day of summer, can you blame me?

The result is these chewy protein balls that are perfect for dessert or a midday snack.

It's a win.

Chai Spiced Carrot Cake Bites

Makes 18 one inch balls

  • 1 c melted fat of choice (I used half cacao butter, half coconut oil)
  • 10 scoops turmeric bone broth protein from Ancient Nutrition (or whatever protein suites you)
  • 1/2 c coconut flour
  • 5 medium carrots
  • 1 cup seeds/nuts (I used pepita and chopped walnuts)
  • 2 t cinnamon
  • 10 drops ginger essential oil
  • 1 t vanilla extract
  • pinch finely ground black pepper
  • pinch sea salt
  • 1/4 c stevia (or sweetener of choice, could use honey, optional)
  • Unsweetened coconut shreds for rolling, about 1/2 c (could use chopped walnuts)
  1. Roast or steam carrots until just tender, about 5 minutes. Carefully pulse in vitamix, there should still be some pea-sized chunks of carrot
  2. Add to mixing bowl and combine with all ingredients
  3. Place bowl in freezer until doughy, about 15 minutes
  4. Spread coconut shreds onto a plate for rolling
  5. Spoon out desired size for balls, roll in palm first to form, then coat in coconut shreds
  6. Store in fridge for nice chewy texture

Eat real food

You know, food is either contributing to your health or taking away from your health. There's no in between.

This is a perfect example; cake takes away from your health, homemade cake-like balls promote your health.

It's amazing the difference you can FEEL eating real, simple food.

Get creative and take some time to care for yourself, so you can show up better for the world.

And eat more cake. The healthy kind.
