Banana Bread

And all it's lovely variations

It's no secret

Banana bread is the king of quick baked goods.

It's easy to healthify, customize, and devour the whole batch smeared with nut butter.

Yep. It's all about that smear.

My most recent variation includes fresh cherries, but you can customize this ish to your liking, and seasonal availability.

It might seem basic, but banana bread is just so good.

Let's call it classic instead?

My version has no grains, dairy, sweeteners, or anything weird.

GRAIN FREE BANANA BREAD

  • 3 ripe bananas, mashed 
  • 4 eggs
  • 1/2 c nut butter of choice 
  • 3/4 c coconut flour
  • 2 t cinnamon
  • 1 T baking powder
  • optional: handful of unsweetened coconut flakes
  • (see variations for mix-in ideas)
  1. Preheat oven to 350, grease a loaf pan, or line with parchment
  2. Mix wet ingredients
  3. Fold in dry ingredients, mix until just combined
  4. Add variation mix-ins last
  5. Bake for 45-60 minutes, until knife comes out clean.
  6. Cool before slicing 

Variations:

  • Cherry Tahini (use tahini for nut butter, add 1 c pitted fresh or frozen cherries)
  • Cashew Cinnamon (use cashew butter, add extra cinnamon, top with sliced banana)
  • Salted Chocolate PB (use PB for nut butter, replace 1/4 c flour with cacao powder, add 1/2-1 c chocolate chunks, sea salt flakes on top)
  • Berry Banana Nut (use almond butter, add 1 c fresh or frozen berries, 1/2 chopped walnuts)
  • Lemon Poppy Seed (use tahini, add zest of two lemons, 2 T poppy seeds)
